I have a great pair of saloon doors I got at a yard sale and I have no idea how to install them. I also need to take about 3/4 to 1 inch off the total width, depending on how much clearance is needed between the two doors, and I plan on splitting that amount between the 2 doors, any ideas?
You need a Spring loaded Hinge that swings in both Directions- Trim the doors with a Table Saw-sand the edges after cutting, do not make the Hinge side to small, as it carries the weight of the door.

Splitting the amount between the two doors is a good idea since it will keep them the same width.
I would use at least 2-4 hinges on each door.
you can buy standard cafe door hardware at many places , then read instructions b4 cutting doors , these are double acting pivot type hinges , very easy to install if the jamb is wood , if drywall it becomes more complicated to insure screws are long enough to get into wall stud
